Been in Culinary about 14 years. The last 10 years as Executive Chef at Reality House, Daytona Beach, Fl. and now the Director of Food Service Operations. My employer, SMA Healthcare, is the largest Behavioral Healthcare organization in Central Florida. I have three Executive Chefs that report to me, located in three counties of Florida. The facility I was in is a prison work release program. A few years back I started a certification program for the clients we serve. During that time period we certified 54 clients to the level of CC, CPC, and even a CEPC.
When I'm not working, I do paintings, specializing in paintings of desserts.
Prior to culinary, I was a professional photographer for 30 years. I am past president of the Florida Professional Photographers Assoc.
I am also a past president of the St. Augustine ACF Chapter, and the past President and founder of the newly organized ACF Mid Florida East Coast Chapter. Currently I serve as the Chairman of the ACF Bylaws committee.
